Ingredients
This is a super easy recipe that calls for just a few ingredients:
Fresh Oyster Mushrooms: We definitely need them fresh for this recipe, so don't try it with dried mushrooms. You can use any type from grey to pink, yellow or blue. How do you know when oyster mushrooms are bad? They become slimy, have a darker color and smell bad when they go bad.
Butter: We prefer butter because we love the flavor of it with mushrooms. But if you want a vegan recipe, you can definitely use tablespoons of olive oil or sesame oil instead.
Garlic: As in many recipes, garlic makes an amazing addition to the final flavor of the dish. We prefer them with their skin as it is better when frying the mushrooms in batches. We just crush them right before adding them into the hot pan.
Green onions: These are totally optional. You can use any herb you like. Parsley or thyme could be nice alternatives.
Spices: We want to keep it simple, so use only salt and pepper when frying them. And we sometimes sprinkle crushed chili pepper just when serving. You can use any spice you like with mushrooms.
How to Make
First prepare oyster mushrooms: The first thing you should know about this step is that you shouldn't wash or rinse mushrooms. You just need to clean them with a slightly damp paper towel. If you wash the mushrooms under water, they release too much water when you cook them, which is not something desired. After cleaning them, cut them into bite size. You can either remove their thick rubbery stems or leave them.
Second, fry the prepared oyster mushrooms in batches: To do this, melt butter in a heavy skillet over medium-high heat. Place the mushroom pieces in the hot skillet in a single layer. Cook them until golden and flip them over. Add in crushed garlic cloves with their skin, chopped green onions, salt and pepper. Cook that side until golden too. Shake the skillet often and reduce the heat when it is needed until golden. Transfer them in a bowl and repeat the same steps for the remaining mushrooms.

- You can either remove the thick stems or leave them. We cook them both ways. The stems are rubbery and chewy, but we are not that bothered.
- Don't overload the pan. Fry the mushrooms in batches. Otherwise, they will be steamed.
- It's not a good idea to make them ahead of time. They lose their nice texture as they sit, so the best thing is to fry them right before serving.
